Brunch with the Birds Dec 15 , 12:00 pm Join Executive Director Rachel McCrystal and Shelter Director Hervé Breuil at 12:00 PM on Sunday, December 15th for an all-vegan brunch inside The Gray Barn, followed by an immersive tour to meet our rescued bird residents. Meet some of the Hudson Valley 100 chickens along with other birds with special rescue stories. Breakfast Scramble – tofu with kala namak, mustard spice, and turmeric. Taos Black Beans – black beans with garlic, onions, red chili spice, sage, and pepper. Harvest Hash – roasted russet and sweet potatoes with carrots and onions. Sanctuary Salad – Arugula and spinach salad with cranberries, tomatoes, almonds, and capers. Topped with a Umeboshi vinaigrette dressing. Champagne mimosas, coffee, and tea will be available.
